Food Service
You will enjoy attractive, delicious home-style vegetarian meals prepared with your nutrition in mind. Vegan options are also available on a regular basis. Our friendly, professional staff will accommodate special needs such as food allergies or intolerances.
Our food service style is cafeteria/buffet, banquets, wedding receptions, and special services such as snack and beverage stations are available upon request.
Food service must have a minimum of 30 guests to operate. Remember, that two smaller groups might total enough guests to qualify for food service. Contact us to see if this works for your group.
Our primary kitchen facility is not available for group use, however, for small groups (30 or less) we do have three kitchenettes, which might be available, depending on other bookings.
Menu
Listed below are typical meals at Mt. Aetna. Details may vary, and we reserve the right to add, delete or otherwise alter the menu as needed. There are simply too many options to list them all, but this should give you an idea of the selection. You will not go hungry. If you are a meat and potatoes kind of person, we encourage you to try something a little different. You may well find you like it!
Outdoor school meals have less variety and the main courses are adjusted to fit the common preferences of young people, while retaining a well balanced diet.
A typical breakfast would include:
- A main dish (one of the following)
- Waffles with toppings such as syrup, sugar free syrup, whipped topping, and fresh fruit.
- Pancakes with toppings such as syrup, sugar free syrup, whipped topping, and fresh fruit.
- French Toast
- Biscuits and gravy (w/vegetarian sausage crumbles)
- American Breakfast of scrambled eggs, hash browns, and a vegetarian sausage.
- Each main dish is typically served with one or more of the following:
- Scrambled eggs and/or tofu eggs
- Tater tots or hash brown patties.
- Vegetarian sausage (Often Morningstar Farms® Veggie Sausage Links)
- Vegetarian bacon (Often Morningstar Farms® Veggie Bacon Strips)
- Oatmeal
- English muffins or bagels
- Danish or scones
- Homemade granola
- A variety of name brand cereals
- Self-serve Fruit Bar (usually about 5 of these items):
- Cantaloupe, cubed
- Honeydew, cubed
- Grapes
- Pineapple, cubed
- Applesauce

A typical lunch or supper would include:
- A main dish (one of the following)
- Lasagna – Tomato and Cheese, Vegetable, and Non-dairy
- MaryLu’s Famous Sweet and Sour Vegetarian Meatloaf
- Haystacks — A Mt. Aetna Saturday night tradition. You start with a layer of corn chips, then smother it with refried beans, and a layer of tender rice, then add layers of shredded cheese (real or non-dairy), lettuce, tomatoes, olives, guacamole, salsa, and sour cream. And add a fresh baked corn bread muffin or two to the side!

- Special K veggie meatloaf
- Baked Ziti
- Spaghetti with homemade, vegetarian meat balls.
- A giant deli style veggie burger or sandwich
- Pizza — Cheese, Vegetable lovers, and Non-dairy cheese.
